Oysters Bienville - Bridge Street Bistro
- 5oz flour
- 3T butter
- 4 sprigs chopped green onions (greens only)
- 3oz cooked bacon
- 1cup cooked and chopped shrimp
- ¾qt heavy cream
In a heated pan, make rue from flour and butter. Add bacon, shrimp and green onions; fold in heavy cream slowly to make a thick mixture. Do not overcook or burn rue mixture. Remove from heat and let mixture cool. Fold in the butter that rises to the top of the mixture before topping oysters with the mixture. Place back in oven at 350-400 degrees for 10-12 minutes.
