This dish is a testament to our journey from day 1. It is metaphoric in defining the evolution of where we started, to where we are now. Matt and myself (Mitch) bought Two Senoritas in August of 2019 with the idea in mind to increase the level of quality of ambiance, atmosphere, equipment, decor, and most importantly food. We spent 2.5 months renovating the restaurant itself and ideating a new menu. We were determined to source local, fresh product and create a healthier, upscale modern Mexican menu. The grilled Red Snapper tacos are iconic to us and our brand because it shows our dedication to doing just that. We are grilling a quality fish in a fresh green chili marinade, topped with a house made jalapeno tartar sauce served on fresh corn tortillas. We are grilling, not frying, we are using a quality Red Snapper white fish, not tilapia, our sauces and marinades are home made with fresh ingredients, and our tortillas are corn not flour. As for the El Melvin Margarita, same thing. We are hand squeezing ALL of our lime juice every morning. Our agave nectar is organic, and our tequila is top shelf. These margaritas not only deliver on quality but also taste. We take pride in our product. You will never find any sour mix or triplesec being made in any of our cocktails. These 2 items are iconic of where the restaurant used to be, and where it is now. They help define our journey and our vision from day 1 and it is great to see it all come to fruition.
