The Pork Belly Rice Bowl represents Mattison’s commitment to serving all-natural, high quality, healthy ingredients. One boast-worthy partnership is between Mattison’s and Niman Ranch. A few years ago, Mattison’s Owner and Executive Chef, Paul Mattison, was introduced to Niman Ranch, a network of more than 740 independently owned, small family farms, covering 22 U.S. states, dedicated to authentic, sustainable farming, and respect for the land and the animals under their care. Niman leads the industry in humane agricultural practices and has been Certified Humane by the ASPCA. The animals are never, ever given antibiotics or added hormones and are fed a high quality, 100% vegetarian diet. As stated on their website, the Niman Mission is earnest: To raise livestock traditionally, humanely, and sustainably to produce the finest tasting meat in the world.
The Niman business model checked all the boxes for Chef Paul. Every Mattison’s menu includes all-natural, high quality, healthy ingredients. Another aspect that cemented the relationship was the strong sense of community and neighborhood. Mattison’s Forty-One is centrally located on 41 in South Sarasota within a short drive for local residents and families from the neighboring areas of Siesta Key, Palmer Ranch, Casey Key and Venice. Supporting small family farms and community suppliers is as much a key element for Mattison’s as it is for Niman. Mattison’s sources ingredients from suppliers who, like Niman, adhere to sustainable practices and show the utmost care for the land and animals. Ingredients from many of these family farms can be found on all Mattison’s menus in dishes like the dish we are featuring – the Pork Belly Rice Bowl – a perfect blend of Ginger Beer braised Teriyaki Pork Belly, Jasmine Rice and Granny Smith slaw.

Chef Paul Mattison, executive chef and proprietor of Mattison’s, operates a successful culinary group on Florida’s Gulf Coast.
