The Pork Belly Rice Bowl tells the story of Mattison’s commitment to serve all-natural, high-quality, healthy ingredients. Providing healthy menu options is something the owner and executive chef, Paul Mattison, looks for when sourcing from small family farms, local vendors, and sustainable suppliers. Chef Paul states, “I believe people want to eat healthy and know what they are putting into their bodies. They also want to know how the food they are consuming is being produced and by whom. As more and more people move towards eating clean, the healthier our population becomes, helping us, as a whole, avoid illnesses and even major viruses.”
One partnership that supports this philosophy is between Niman Ranch and Mattison’s. Niman Ranch is a network of more than 740 independently owned, small family farms dedicated to authentic, sustainable farming, and respect for the land and the animals under their care. The animals are never, ever given antibiotics or added hormones, are treated uber humanely and are fed a high quality, 100% vegetarian diet. As stated on their website, the Niman mission is earnest: To raise livestock traditionally, humanely, and sustainably to produce the finest tasting meat in the world.
The Niman business model checked all the boxes for Chef Paul including their strong sense of community and neighborhood. Mattison’s Forty-One is centrally located on 41 in South Sarasota within a short drive for local residents and families from the neighboring areas of Siesta Key, Palmer Ranch, Casey Key and Venice.
Supporting small family farms and community suppliers is as much a key element for Mattison’s as it is for Niman. Mattison’s sources ingredients from suppliers who adhere to sustainable practices and the utmost care for the land and animals. Ingredients from many of these family farms can be found on all Mattison’s menus in dishes like the dish we are featuring – the Pork Belly Rice Bowl – a perfect blend of Ginger Beer braised Teriyaki Pork Belly, Jasmine Rice and Granny Smith slaw.
In addition to new menu items using fresh, all-natural ingredients, Mattison’s Forty-One has recently renovated the inside dining room and expanded the outdoor dining areas, Mattison's Forty-One offers inside, outside and curbside dining for lunch and dinner, live entertainment, and happy hour specials as well as special event space and full-service catering.
