The River Roll pays homage to Chef Paul opening his latest Mattison's on the beautiful Bradenton Riverwalk in December 2016. This popular sushi roll also highlights how Chef Paul has incorporated a variety of cuisines into his menus. Chef Paul has an Italian heritage and grew up cooking alongside his Italian grandmother, Esther. So, naturally you will find many Mediterranean and Italian influenced items on the menus. When he decided to offer Asian influenced dishes, and specifically Sushi, at Mattison’s Riverwalk he relied on his extensive culinary travel experiences but also enlisted local sushi experts to consult on authentic menu items and proper technique. Chef Paul states, “We love this location in Bradenton. The businesses and residents welcomed us so warmly when we located here. We truly feel a part of this wonderful community. The River Roll exemplifies the diversity and variety of all Downtown Bradenton offers"
