Cooking on ABC 7 With Reyna's!

Chef Gino Calleja appeared live on ABC 7's Suncoast View and prepared a Reyna's Taqueria favorite Chicken Tinga.

Chicken Tinga Recipe

2 lb chicken breast
2 cups Spanish onions sliced to ½ inch wide
1 lb ripe roma tomatoes sliced into ½ inch wide
2 oz canola oil
4 cloves garlic sliced thin each chipotle peppers roughly chopp
4 oz chicken stock (reserved)
2 bay leaves
1 tsp Mexican oregano
salt and pepper

Procedure
In a medium size pot add about two quarts of water and bring to a boil, add the chicken breast, one clove of sliced garlic, half cup of sliced onions and the oregano, simmer for about 20-25 minutes while skimming the top and discarding as it cooks. Remove the chicken from the liquid (reserve about 4 oz. of the liquid) into a sheet pan to cool slightly enough to handle and pull to pieces and set aside. In a large sauté pan at medium heat add the canola oil and the bay leaves and cook for about four seconds then add the onions and the garlic stirring constantly to translucent, add the tomatoes and chipotle peppers and lower the heat for about five minutes; add the pulled chicken, chicken stock and season with salt and pepper. Cover the pan and let the chicken absorb all the flavors and tenderize a bit more about ten more minutes and adjust the seasoning if desired. This can be make into tacos, sopes or Molotes.

RECIPE: Chef Gino's Salsa AsadaIngredients80 Roma tomatoes2 Spanish onions1/2 cup Garlic15 jalapeños5 cups chopped cilantro2 fresh limes juice2 tbs. black pepper5 Tbs. kosher saltProcedure Place the tomatoes in a Comal and roast until dark and charred completely, remove from the fire, and set aside. Roast the jalapeños, onions, and garlic then combine with the tomatoes, let cool slightly. Add the cilantro and purée with the immersion blender leaving it chunky enough. Season with salt, pepper, and lime juice. Let it completely cool down and store in the refrigerator.
