Join Fess Parker National Sales Director and Advanced Sommelier Elizabeth Cooper and Chef Paul Mattison as they present an exclusive wine pairing dinner featuring Fess Parker wines. Chef Paul has crafted this wine dinner menu to perfectly complement the wines in the Fess Parker portfolio.
The event will be held at Mattison’s Forty-One in the private Galleria. The evening will begin with a welcome reception followed by the 5-course wine dinner with Ms. Cooper explaining each pairing throughout the courses of the evening and providing some history about that particular wine. Chef Paul is on hand to describe the food preparation and why he made his food choices in pairing the wines.
Fess Parker’s portrayal of frontiersman, Davy Crockett, and Daniel Boone during the 1950s and 1960s garnered him a legion of adoring fans spanning many generations. Fess’s similarity to those straight-talking, hardworking country gentlemen is what endeared him to millions and helped him achieve success in the business world when he decided to walk away from Hollywood in the early 1970s. When Fess Parker purchased the 714-acre Foxen Canyon Ranch in 1988, he planned to run cattle, plant a few acres of vineyard, and perhaps, someday, establish a small winery. His dream was to start a family business that he could pass on to future generations.
Today the Fess Parker Winery is a 30+ year family-owned and operated winery, ranch, farm, and brewery. Fess Parker wines are fully sustainable, SIP Certified, featuring all hand-harvested, small production of many wines with a small volume to maintain the superior quality Fess Parker set out to create. Their focus is on site-specificity, climate, soil, topography, aspect, clonal selection, and working with each vintage uniquely using low intervention and classic winemaking methods. Fess Parker’s dream and vision have come to fruition with an award-winning collection of fine wines.
